Scandinavian summer as a child reached perfection when it involved friends and stringing berries (ideally wild strawberries) on straws. We would lay in the grass under a burning sun and slowly eat the berries, one by one… Today I am using those memories to create this simple dessert. With the addition of lavender infused cream, and a plate, the wild straw has been replaced with flavorful wild lavender. Sweet, natural and gratifying.
fresh berries with lavender infused whipped cream
lavender stems for stringing
1 cup cream
2 tablespoons lavender flowers
lavender flowers for garnish
Combine cream and lavender flowers and infuse to taste, about 1-2 hours.
Whip cream until soft peaks form.
String berries onto lavender stems and serve with the whipped cream garnished with fresh lavender flowers.
