These delicate little flowers create the most delectable cordial. This kind of cordial is simply a naturally flavored concentrated simple syrup used for various drinks or desserts with and without alcohol. Elderflower’s distinctive taste makes a delicious cocktail mixed with vodka or champagne. For a lemonade like non-alcoholic version, dilute with flat or sparkling water.
elderflower honey cordial
20 bunches fresh elderflowers
2 sliced lemons
juice from 1 lemon
4 cups water
2 cups honey
Put fresh flowers and sliced lemons in a pitcher or jar big enough to hold ½-¾ gallon.
Bring water, honey and lemon juice to a boil.
Pour the hot liquid over the elderflower bunches and the sliced lemons.
Stir, cover and refrigerate for 48 hours.
