It’s hard to find anything more refreshing on a hot summer day than a glass of ice cold lemonade. Sweetened with honey and agave syrup with added flavors and nutrition from strawberries, rhubarb and coconut water, this is no regular lemonade. Enjoy plain or with a splash of vodka.
strawberry rhubarb coconut water lemonade
1 cup sliced rhubarb
1 cup sliced strawberries
1 cup water
½ cup agave syrup
¼ cup honey
1 cup fresh lemon juice
6 cups coconut water
2-3 sliced lemons
Mix sliced rhubarb and strawberries with 1 cup water and let boil for 20 minutes. Don’t stir during this time or the syrup will become cloudy.
Strain mixture and discard rhubarb/strawberry pulp.
Add honey and agave syrup to the liquid and bring back to a boil for 5-10 minutes until honey and syrup is dissolved and liquid has slightly thickened, then refrigerate.
Add lemon juice, coconut water, sliced lemons and ice cubes before serving.
