Sweet and spicy, smooth and crunchy, these creamsicles pop with unexpected flavors and textures. Using popsicle molds may be the easiest way to make them, but regular glasses work as well. These were made using tall shot glasses.
For an alcohol free version, use non alcohol cider or apple juice in place of Champagne.
strawberry champagne creamsicles with rose water, cardamom and pistachios
¼ teaspoon rose water
¼ teaspoon ground cardamom
¼ cup whipping cream
¼ cup plain Greek style yogurt (find recipe for homemade yogurt here)
¼ cup champagne (or non alcohol cider or apple juice)
150 g pureed fresh strawberries
3 tablespoons honey
2 egg yolks
2 egg whites
Whip cream with rose water and cardamom to a soft peak, add yogurt and set aside. Whip egg yolks with honey until white and fluffy, then whisk in with the whipped cream. Mix strawberries with champagne and add to the blend. Whip egg whites to stiff peaks and gently fold into the mixture. Fill popsicles molds and freeze over night. Just before serving, remove the pops from the molds and coat the tips with chopped pistachios.
Makes about 6-8 popsicles.
